Makes 16 biscuits


  • 100 g butter
  • 2 egg whites
  • 1/4 cup sugar
  • 1/2 cup flour
  • 1/2 teaspoon pure vanilla extract


Preheat the oven to 180 C.
Melt the butter in a small saucepan over a medium heat until golden brown.
Beat the egg whites with the sugar until thick and shiny. Add the flour, vanilla and butter and mix well.
Spread the batter in thin circles of 6-8 cm diameter on a lined baking tray. Bake for 8 minutes until golden. Remove from the oven and wrap around the handle of a wooden spoon to curl or place straight onto a wire rack to cool.
