Ingredients
- 2 tablespoons butter
- 1 kg courgettes
1 onion - 1 litre chicken stock
- 1/2 teaspoon curry powder
- 1/2 lemon
- salt and freshly ground black pepper
Method
Place butter, zucchini and onion in a saucepan, cover with a lid and cook over
a medium heat for 10-12 minutes or until vegetables have softened. Stir
as necessary.
Add chicken stock, curry powder, a squeeze of lemon juice and salt and freshly
ground black pepper to taste. Simmer for 5 minutes and then blend in batches.
Add more lemon juice if necessary and serve
This soup was lovely. Really good way to use up the abundance of courgettes from garden.
Is it necessary to add the lemon?
Hi Patricia, the lemon seems to bring out the flavour of the courgette, it won’t make the soup taste lemony, just a flavour enhancer.
