Courgette Soup

  • 2 tablespoons butter
  • 1 kg courgettes
    1 onion
  • 1 litre chicken stock
  • 1/2 teaspoon curry powder
  • 1/2 lemon
  • salt and freshly ground black pepper






Place butter, zucchini and onion in a saucepan, cover with a lid and cook over
a medium heat for 10-12 minutes or until vegetables have softened. Stir
as necessary.
Add chicken stock, curry powder, a squeeze of lemon juice and salt and freshly
ground black pepper to taste. Simmer for 5 minutes and then blend in batches.
Add more lemon juice if necessary and serve
