Black Sticky Rice

Ingredients

  • 3 cups black rice
  • 4 cups water
  • 250g palm sugar
  • 1 1/3 cups water, extra
  • 2 cups coconut milk

Method

Rinse the rice under running water. Place the rice in a saucepan with the 4 cups water and bring to the boil. Reduce heat and simmer for around 10 minutes until water has been absorbed. Place the palm sugar and extra water in a saucepan and bring to the boil, stir until sugar is dissolved. Remove from heat then add the syrup to the rice tasting to reach desired sweetness. To serve, warm in a saucepan with coconut milk and extra sugar syrup as required.
