Rice Pudding With Almonds

  • 1.4 litres milk
  • 150g sugar
  • pinch of salt
  • 1 vanilla bean split
  • 240g short grain rice
  • 3 cups cream, whipped
  • 150g flaked almonds, toasted


milk to the boil with sugar, salt and vanilla bean, then tip in rice and
stir until boiling. Reduce heat and simmer very gently for 30 minutes until
rice is well cooked. Allow to cool and fold cream and almonds into the rice.
Serve with poached fruit.
