Corn and Red Pepper Relish

  • 2 cobs corn
  • 1 tbsp olive oil
  • 1 red pepper, finely chopped
  • 1 small red onion, finely chopped
  • 1/4 cup coriander leaves
  • 2 tablespoons extra virgin olive oil
    2 tablespoons balsamic vinegar
  • salt and freshly ground black pepper




Brush corn with oil and then grill or barbecue until kernels are bright yellow and start to get brown patches.  Remove from heat and when cool enough to handle scrape kernels from corn with the blade of a knife.
Mix all ingredients in a bowl and season with salt and pepper.
Serve with grilled chicken
