- 2 pita bread rounds
- 2 tablespoons olive oil
- 2 teaspoons zahtar
- 1 cos lettuce
- 1/2 telegraph cucumber
- 2 radish
- 1/2 red onion
- 2 vine ripened tomatoes
- 1/2 cup roughly chopped Italian parlsey
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh lemon juice
Cut each pita bread round into two flat circles, then into small triangles (scissors work well for this).
Heat the olive oil in a fry pan and quickly fry bread until golden. Remove from pan and place on paper towels. Sprinkle bread with zahtar.
Separate lettuce leaves and wash, leave small leaves intact and roughly chop large leaves. Cut cucumber, radish, onion and tomato into chunks.
Arrange salad in 4 bowls and drizzle with combined olive oil and lemon juice.
