Bran muffins are quick and easy to make and delicious with the addition of fruit such as feijoa.
They are best on the day of making and always good with a spread of butter.
Ingredients
- 2 cups bran
- ¾ cup brown sugar
- 1 cup plain flour
- 1 teaspoon baking powder
- ¼ cup golden syrup
- 25g butter
- 1 cup milk
- 1 teaspoon baking soda
- 1 egg, lightly whisked
- 1 cup feijoa pulp
Method
Preheat the oven to 180 C. Grease a 12 cup muffin tray.
Combine the bran, brown sugar, flour and baking powder in a mixing bowl.
Gently melt together the golden syrup and butter, add to the dry ingredients along with the combined milk and baking soda, egg and feijoa. Mix just to combine.
Spoon the mixture into the muffin cups and bake for 15-20 minutes until golden and firm to the touch.
Allow to cool slightly before transferring to a wire rack to cool completely.
I made these yesterday – was surprised at the amount of sugar, which I thought was way over the top, so left it out. The resulting muffins have an excellent flavour and texture, with the golden syrup adding sweetness. I think 1/4 cup sugar for those with a sweeter tooth would be as much as you’d need. When sugar consumption is such an issue I feel we should re-think the amount of sugar in recipes like this.
