Strawberry Coulis

  • 450g strawberries
  • _ cup caster sugar
  • 1 tablespoon lemon juice


Wash and dry strawberries, then remove any green stem and crown. Place in a food processor with sugar and lemon juice and whiz until the sauce is glossy and the sugar has dissolved. Pour the sauce through a fine sieve, stirring with a wooden spoon. Taste for sweetness and adjust to taste.
