Kumara And Cardamom Pudding

  • 250g
  • kumara, peeled, cooked and pureed
  • 1 cup coconut cream
  • 2 eggs
  • 1/3 cup dark brown sugar
  • 1/2 teaspoon ground cardamom
  • 1 tablespoon orange juice
  • zest of 1 orange
  • chopped pistachios


all ingredients in a food processor until smooth. Pour into lightly greased
ramekins and sprinkle with pistachios. Bake for 25-35 minutes
Serve warm.
