Ingredients
- 125g butter
- ¼ cup firmly packed brown sugar
- 3/4 cup caster sugar
- 2 eggs, lightly whisked
- 1 3/4 cups plain flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 2 ripe bananas, mashed
- ¼ cup chopped walnuts
- 1 cup yoghurt
- 1 tsp baking soda
Method
Preheat oven to 180 C. Beat butter and sugar until pale and creamy and then add eggs one at a time, beating well after each addition.
Add combined sifted flour, baking powder and cinnamon along with the bananas, walnuts and then the yoghurt mixed with baking soda.
Pour batter into a 25 cm lined loaf pan and bake for 1 hour or until a skewer inserted comes out clean.
