Banana Walnut Bread

  • 125g butter
  • ¼ cup firmly packed brown sugar
  • 3/4 cup caster sugar
  • 2 eggs, lightly whisked
  • 1 3/4 cups plain flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 2 ripe bananas, mashed
  • ¼ cup chopped walnuts
  • 1 cup yoghurt
  • 1 tsp baking soda


Preheat oven to 180 C. Beat butter and sugar until pale and creamy and then add eggs one at a time, beating well after each addition.
Add combined sifted flour, baking powder and cinnamon along with the bananas, walnuts and then the yoghurt mixed with baking soda.
Pour batter into a 25 cm lined loaf pan and bake for 1 hour or until a skewer inserted comes out clean.

Its so easy I make double the recipe – freeze one loaf and eat the other. My sister-in-law borrowed your book and she made the
    Banana Chocolate Cake – another scrummy creation. Needless to say she is converted and is buying your book.
