Ingredients
- 250g butter
- 1 cup milk
- 1 cup sugar
- 1 egg, whisked
- 3 cups flour
- 3 teaspoons baking powder
- 1 cup sultanas
Method
Preheat 180 C. Place butter, milk and sugar in a saucepan over a moderate heat, stir to dissolve sugar. Add egg and combined flour, baking powder and sultanas. Pour into a lined loaf pan and cook for 1 hour or until loaf tests cooked.

As a person who doesn’t eat dairy food or eggs, I was thrilled to discover this CAKE recipe. I have been missing my cake.
It was for chocolate cake and I don’t eat cocoa either. So I have changed it to apple and cinnamon. Have now made it twice and I find it delicious. BUT others would think it a bit heavy, their being spoiled by having real cake. Can anyone improve on it please?
Here it is. You cook it in a rubber-type cakepan, and you are supposed to mix it in the same pan (no washing up). I preferred to use a separate bowl the second time, as it was easier to mix, but the first did work.
Flour 1.5 cups, Sugar 1 cup (half brown), Cinnamon 1 TBSP, Baking Soda 1 tsp, Salt 0.5 tsp. Put all these dry ingredients in the nonstick cake pan you will cook in.
Using handle of wooden spoon, poke three holes in dry ingredients.
Pour in wet ingredients, which are Stewed Apple 1 cup, Veg oil 0.33 cups, White Vinegar 1 TBSP.
Use fork to stir until smooth. Bake 180 (350) deg for approx 30 minutes or until skewer comes out clean. Cool in pan.
