Easter Buns (Radio Live)

  • 3 cups self raising flour
  • 1 teaspoon cinnamon
  • 1 teaspoon mixed spice
  • 1/4 cup brown sugar
  • 1 cup mixed dried fruit
  • 1 cup ginger ale
  • 1 cup cream
  • glaze
  • 50 g butter
  • juice and finely grated zest of 1 orange
  • 1/4 cup brown sugar


Preheat oven to 220 C.
Place dry ingredients in a bowl and make a well in the centre. Pour in ginger ale and cream. Gently mix and then turn out onto a lightly floured board and roll into a rectangle. Cut out circles and place touching on a cold baking tray. Bake for 15 minutes.
Heat glaze ingredients together and brush over hot buns.
