An oldie but a goodie. Who doesn’t like Fudge Slice or otherwise called Hedgehog Slice.
The great thing is that it is unbaked so no cooking involved.
Ingredients
- 250g butter
- 1/4 cup cocoa
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 packets wine biscuits
- 2 eggs
Method
Line a large slice pan with baking paper.
Melt the butter, cocoa and sugar together in a small saucepan, stirring to dissolve the sugar. Remove from the heat and add the vanilla, cool until just warm.
Place the biscuits into the bowl of a food processor and pulse until chopped but not crumbs. This may need to be done in batches.
Lightly whisk the eggs in a small mixing bowl. Stir the eggs into the chocolate, mixing well.
In a large mixing bowl combine the biscuits with the chocolate mixture.
Press into the prepared slice pan.
Ice with chocolate or chocolate mint icing.
Refrigerate overnight before cutting into bars.
can i use something other than eggs?
How much is two pkgs. of wine biscuits? No such thing in Canada that I know of. Can you tell me how much that is in grams or cups??
I means 2 packets of wine biscuits.
you can use any kind of cookie (biscuits) though when ever i’ve seen this recipe/had this slice it generally uses plain ones (wine biscuits)
When I was a kid we just bashed the biscuits with a milk bottle to crush them – big fun for us! A great variation is to leave off the icing and instead roll the base mixture into mouthful-sized balls, then roll those balls in desiccated coconut. Yum!
