Ingredients
- 1.2 head broccoli divided into florets
- 1/4 green cabbage, shredded
- 1 cup fresh bean sprouts
- 1 large carrot, cut into thin sticks
- 1/2 telegraph cucumber, sliced
- 2 eggs, hard boiled
- 2 medium potatoes, boiled and quartered
- 3 large handfuls crisp fried noodles
- 1 1/2 cups satay sauce (see recipe)
Method
Arrange a nest of crisp fried noodles on a large serving platter and pile on the vegetables. Top with quarters of eggs, potato slices and cucumber. Drizzle over the satay sauce and serve.
