Serves 4


  • 1.2 head broccoli divided into florets
  • 1/4 green cabbage, shredded
  • 1 cup fresh bean sprouts
  • 1 large carrot, cut into thin sticks
  • 1/2 telegraph cucumber, sliced
  • 2 eggs, hard boiled
  • 2 medium potatoes, boiled and quartered
  • 3 large handfuls crisp fried noodles
  • 1 1/2 cups satay sauce (see recipe)





Arrange a nest of crisp fried noodles on a large serving platter and pile on the vegetables. Top with quarters of eggs, potato slices and cucumber. Drizzle over the  satay sauce and serve.
