Ingredients
- 125 g butter
- 250 g brown sugar
- 350 g mixed dried fruit
- 450 g crushed pineapple
- 2 eggs, whisked
- 250 g self raising flour
- 2 teaspoon mixed spice
- 2 teaspoons essence of choice
Method
Preheat the oven to 180 C.
Place the butter, brown sugar, fruit and pineapple in a saucepan and bring to the boil. Boil for 3 minutes and then remove from the heat and allow to cool.
Mix in eggs and then flour, spice and essence. Pour into a lined 20 cm square cake pan and bake for 1 hour.
