Ingredients
- 6.5 kg tomatoes, roughly chopped
- 7 onions, peeled and chopped
- 14 sprigs parsley
- 2 teaspoons white pepper
- 1 cup sugar
- 7 cloves
- 2 tablespoons plain salt
- 125 g butter
- 8 tablespoons flour
Method
Place tomatoes, onions, parsley, pepper,sugar, cloves and salt in a large saucepan and bring to the boil. Simmer for 45 minutes and then mouli or pass through a sieve.
Work together the butter and flour until smooth. Roll the mixture into small balls and stir into the hot soup, cook for a further 10 minutes.
