- 1 1/2 cups plain flour
- 3/4 teaspoon salt
- 1/4 cup caster sugar
- 2 1/2 teaspoons baking powder
- 2 teaspoons grated lemon rind
- 3/4 cup fresh or frozen blueberries
- 1 egg, lightly whisked
- 3/4 cup milk
- 1/3 cup oil
Preheat oven to 200 C. Sieve the flour, salt, caster sugar and baking powder into a bowl. Make a well in the centre. Sprinkle over the lemon rind and blueberries.
Mix the egg with the milk and oil and pour into the well. Lightly mix together, do not over mix as it makes the muffins tough. Spoon into greased muffin tins and bake for 12-15 minutes or until golden and springy to touch.
