Chocolate Banana Cake (Radio Live) by Helen Jackson

Ingredients

  • 400 g butter
  • 3 cups sugar
  • 2 teaspoons vanilla
  • 4 eggs
  • 2 cups mashed banana
  • 4 cups flour
  • 6 tablesoons cocoa
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 cup milk
  • 2 teaspoons vinegar

Method

Preheat oven to 160 C. Beat butter and sugar until pale and creamy. Add vanilla and beat in eggs one at a time. Add mashed banana and then combined flour, cocoa and baking soda. Gently mix in baking soda dissolved in the milk and also the vinegar. Pour into a 24 cm cake pan and bake for 45 minutes until the cake tests cooked.
