Vegetarian Moussaka

Serves 4-6

This dish can be made ahead of time and cooked when needed. Leftovers are great, I sometimes make it a 1/3 bigger so I do have some leftover for the next day!

Ingredients

  • 1 large eggplant
  • salt
  • olive oil
  • 100 g feta cheese(garlic & cumin flavour works well)
  • 125 g cottage cheese
  • freshly grated parmesan cheese
  • sauce
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 250 g button mushrooms, sliced
  • 2 medium courgettes, sliced
  • 1 large pepper ( I use 1/2 red & 1/2 green), seeded & chopped
  • 410g can chopped tomatoes ( Moroccan flavour works well)
  • 1/2 cup red wine
  • 1 tablespoon freshly chopped parsley
  • salt and pepper to taste
  • * keep the veggies reasonably chunky*
  • White Sauce
  • 60 g butter
  • 1/4 cup plain flour
  • 1 teaspoon mustard powder
  • 2 cups milk
  • 1 egg, beaten
  • freshly grated nutmeg
  • salt & pepper to taste

Michelle’s Savoy Christmas Cake

 

This recipe has been made for years by my friend Michelle, apparently the origin is from the Savoy Hotel in London.

Ingredients

  • 750 ml red wine
  • 500 g raisins
  • 500 g sultanas
  • 500 g currants
  • 250 g butter
  • 250 g dark muscovado sugar
  • 4 eggs
  • 90 g glaceed cherries, chopped
  • 90 g peel
  • finely grated rind 1 lemon
  • finely grated rind 1 orange
  • 70 g sliced almonds
  • 1/2 teaspoon each: cinnamon, mixed spice, nutmeg
  • 250 g flour & 1/2 cup

Quince Vodka

Ingredients

  • Grate quince with a coarse grater and fill up bottles to two thirds full (very lightly packed). Pour caster sugar into the bottles, shaking down until sugar comes to the same level as the grated quince. Add Vodka until full.. Seal and turn weekly for a few weeks and then forget about it. After 6 months drain the bottles through a filter. The result is an amber nectar with all the perfume of fresh quince

 

Stir-Fry Ginger Beef with Vegetables

Serves 4

Ingredients

  • 600 g rump steak, sliced into long strips
  • 2 tablespoons grated fresh ginger
  • 3 cloves garlic, crushed
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1/4 cup soy sauce
  • 2 carrots, peeled and cut into matchsticks
  • 2 zucchini, sliced
  • 1 red capsicum, seeds removed and cut into long strips
  • 1 tub button or swiss brown mushrooms, rinsed and sliced
  • 6 spring onions, finely sliced
  • 1 tablespoon fish sauce
  • 2 teaspoons chilli sauce
  • 150 g mung bean sprouts
  • 1/2 cup toasted blanced peanuts
  • 3/4 cup roughly chopped coriander leaves
  • 1 cup crispy noodles
