- 3 tablespoons extra virgin olive oil
- 1 large clove garlic, crushed
- 1 bread stick sliced
- 24 anchovy fillets
- 2 red peppers, grilled and sliced into fine strips
- 3 tablespoons finely chopped parsley
Mix the oil and garlic together. Toast the bread in the oven until golden and crusty, remove from the oven and brush with the garlic oil.
Place two anchovy fillets over each bread slice and criss cross with the peppers. Sprinkle with parsley and freshly ground black pepper.
