Fish Fillets With Coriander

  • 1kg white fish fillets
  • sea salt and freshly ground black pepper
  • extra virgin olive oil
  • juice of 1 lemon
  • 1/2 cup fish or chicken stock
  • 1/4 cup dry white wine
  • 2 tablespoons finely chopped coriander
  • 2 cloves garlic, peeled and crushed




Preheat oven to 180 C.

Lie fish in a shallow baking dish and sprinkle with sea salt and freshly

ground black pepper, olive oil and lemon juice.

In a small saucepan bring the fish stock and wine to the boil and reduce

by half

Add the coriander and garlic and pout over the fish. Bake for 7 minutes

or until the fish has just cooked through.
