Just another comment I forgot to add to my post above: I was so annoyed that I had forgotten to add the crispy noodles (which were sitting in a cupboard ready to add)! Although, it didn’t really matter in terms of enjoyment! But it just goes to show how quickly I needed to produce a meal!
I made this tonight because I needed a dinner to put together, cook and serve in a hurry and I’d hunted through Helen’s Foodlover’s recipes for something which fitted my requirements. I used pork medallions cut into bit sized pieces as per recipe. Without any prompting my husband stated that he loved this recipe and I do too. Lovely flavour. It has a big ‘excellent’ written across the top of the recipe I printed out and I will be making this again! Thank you Helen.
