Ingredients
- 2 cups corn kernels (can used canned or frozen)
- 3 spring onions, finely chopped
- 1 small red capsicum (pepper), finely chopped
- 3 eggs, separated
- 3/4 cup self raising flour
- 1/2 teaspoon baking soda
- 2 tablespoons milk
- salt and freshly ground black pepper
- 25g butter
Method
Mix together corn, spring onion and red capsicum in a bowl. Mix egg yolks into the corn and then flour and baking soda dissolved in milk. Beat egg whites until soft peaks and fold into the corn mixture. Heat butter in a frying pan until sizzling and cook 1/4 cupfuls of mixture until golden on both sides.

This is a fantastic recipe I made them for dinner tonight and they were a total success YUMMO!!
Fritters were beautiful! Beats Edmonds hands down!!! I didn’t have capsicum so just added a little more onion and some parsley.
