Pannacotta

Serves 6

Ingredients

  • 2 1/2 cups cream
  • 1 vanilla bean, split open
  • 1/2 cup sugar
  • 2 leaves gelatine
  • 1/2 cup milk

 

Method

Place the cream, vanilla and sugar in a saucepan and heat until almost boiling, stirring to dissolve the sugar. Soak the gelatine in the milk
for 5 minutes and then pour into the hot cream, whisking to dissolve the gelatine.
Strain the mixture and then pour into lightly oiled ramekins. Refrigerate for at least 3 hours and preferably longer. Run a hot knife around the outside of the pannacotta and then invert onto plates. Decorate with berries or poached fruit and serve.

  • 400 gcan sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 185 g dark chocolate
  • 30 g kremelta
  • 125 g walnut pieces (extra)

  • Crust
  • 1 cup of flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 tablespoons butter
  • 1/4 cup milk
  • Sauce
  • 2 dozen oysters
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 2 teaspoons lemon juice
  • 2 tablespoons chopped parsley
  • salt and freshly ground black pepper
  • 1/2 cup buttered fresh breadcrumbs for topping.

Fruit Jelly

Linda This jelly looks very impressive made in a ring tin, and then turned out. Fill the middle up with more fresh berries.

Ingredients

  • 1 x 750 ml bottle of sparkling wine (I generally use Lindauer)
  • 2 cups sugar
  • 2 cups cherries (halved and stones removed)
  • 3 punnetts of berries (a mixture or all the same – it doesn’t matter)
  • 3 tablespoons gelatine dissolved in 1 cup boiling water.

Mashed Potato Bake

This one is always requested for family do’s (Christmas etc) and if someone is absent, we always have to deliver leftovers. Any leftovers fry up nicely in a non stick pan for breakfast. We usually make the day before to the topping stage then refrigerate and bake when we need it. Would also reheat nicely if made completely in advance.
