Chicken Breast stuffed with Pesto
Serves 4.
Ingredients
- 3 tablespoons pesto mixed with
- 3 tablespoons cream cheese
- 4 chicken breasts, boneless and skinless
- 100 g finely sliced prosciutto

- 1 bottle white grape juice, chilled
- 1 bottle pink grape juice, chilled
- 1 bottle club soda, chilled
- 1 tablespoon lemon juice
- A few frozen or fresh strawberries
Method
Combine all ingredients in a punch bowl. Stir to blend & serve immediately
Sangria

- 1 bottle (750 ml) red wine
- 1 lemon cut into wedges
- 1 orange cut into wedges
- 2 tablespoons sugar
- 1 nip brandy
- 2 cups dry ginger ale, chilled

- 1.5 litres cranberry juice, chilled
- 3 cups apple juice, chilled
- 3/4 cup fresh lemon juice
- 1 1/2 cups orange juice
- 3 litres ginger ale, chilled
Ginger and Mint Punch

- Place sugar, water and mint leaves into a saucepan,
- Cook over low heat, stirring constantly, until sugar has dissolved.
- Set aside until cold.
- Combine syrup with grapefruit juice.
- Just before serving, add ginger ale & ice cubes.
- Garnish with slices of lemon & mint leaves.
- Makes 7 1/2 cups
