Ingredients

  • 100g roasted unsalted cashew nuts
  • 2 cloves garlic, crushed
  • 2 tablespoons grated fresh ginger
  • 1 teaspoon cinnamon
  • 1 teaspoon ground cardamom
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon chilli flakes
  • 1/2 teaspoon tumeric
  • 2 onions, finely chopped
  • 3 tablespoons oil
  • 3/4 cup natural unsweetend yoghurt
  • 600g lean lamb pieces
    400g can crushed tomatoes
  • 2 tablespoons chopped fresh mint and parsley
  • 3 tablespoons lemon juice

 

Sticky Asian Oxtail

This dish is delicious and decadent. It is one of my entertaining favourites.

Ingredients

  • 2kg oxtail, chopped into pieces
  • salt
  • 1/4 cup flour
  • 1/2 cup rice wine (or sherry)
  • 3/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 star anise
  • 2 cups beef stock
  • 1/2 cup water
  • 2 cm knob ginger, sliced
  • 1 red chilli, seeds removed and finely chopped
  • 3 kaffir lime leaves – torn in half
  • 2 x 2cm wide strips orange peel without pith
  • 1 tsp finely grated lime rind
  • oil for frying

 

 

Chicken Marbella

Ingredients

  • 8 Chicken thighs, preferably bone in
  • 4 cloves garlic, crushed
  • 1/4 cup fresh oregano or 1 tablespoon dried
  • ½ cup red wine vinegar
  • 1 cup prunes pitted
  • 4 tablespoons olive oil
  • ½ cup green or black olives, pitted
  • ½ cup capers
  • 1 tablespoon lemon juice
  • 6 bay leaves
  • 1/4 cup brown sugar
  • 1 cup white wine
  • 1/2 cup chopped parsley

 

 

Double Chocolate Biscuits

 

My children like warming these in the microwave so they are fudgy and chewy.

Ingredients

  • 125g dark chocolate
  • 125g butter
  • 1 cup flour
  • 1/3 cup Dutch cocoa
  • 1 teaspoon baking powder
  • 1 1/2 cups sugar
  • 100g white chocolate, roughly chopped
  • 2 eggs, lightly whisked
  • 1 teaspoon vanilla extract

Rich Oxtail Casserole

Serves 6

Ingredients

  • 2 kg oxtail, chopped into pieces
  • 1/4 cup flour
  • salt and freshly ground black pepper
  • 3 tbsp oil
  • 3 onions, finely sliced
  • 3 medium carrots, chopped
  • 3 celery stalks, sliced
  • 2 leeks, white part only, finely chopped
  • 5 cloves garlic, crushed
  • 2 cups red wine
  • 2 tablespoons tomato paste
  • 3 cups beef stock (approximately)
  • 2cm wide strip of orange peel, without pith
  • large bunch of herbs – bay leaves, thyme, parsley, tied wtih string

 

Method

Preheat oven to 150 C. Coat meat in flour seasoned with salt and freshly ground black pepper. Heat a little oil in a frying pan and brown pieces in batches, set aside. Heat extra oil in pan and gently cook onion, carrot, celery, leeks and garlic for 10 minuts. Increase heat and add red wine allowing it to bubble and reduce by half. Place meat in a large casserole and pour over red wine and vegetables. Add tomato paste abd cover with beef stock. Add herbs and orange peel. Cover and place in oven, cook for 3 hours. Remove herbs and orange peel. Remove meat and keep warm, reduce sauce until thickened. Check flavours and return meat to sauce. Serve with mash and steamed greens.

  • 6 oz (170g) Currants
  • 4 oz (112g) Chopped peel

Cross Paste

  • 1 oz (30g) butter or Margarine
  • 2 oz (60g) Plain flour
  • 4 tbsp Water

 

Glaze

  • 2 oz Sugar
  • 4 tbsp Water

  • 1 1/2 cups caster sugar
