
Ingredients
- 1.8 kg red tomatoes
- 900g onions
- 4 cups chopped celery (not the green tops)
- 4 cups chopped cucumber
- 6 cups sugar
- 4 cups vinegar
- 2 tablespoons mustard
- 1 tablespoon tumeric
- 6 tablespoons cornflour


The dough mixture is forgiving, if it feels a little sticky then add a sprinkle of flour until you get to a dough that is soft and pliable and not too sticky.

Place
wiped plums in a saucepan with a small amount of water and bring to the
boil, simmer until plums are tender. Rub plum pulp through a sieve. Measure
pulp and weigh 2 ½ cups honey for every litre of pulp. Bring pulp to the
boil and add honey, cook gently until thick. Pour into sterilised jars and
seal.
