- 125 g butter 1/4lb (quarter)
- 1 cup flour
- 3-4 drops tabasco sauce
- 1/4 teaspoon salt
- 1 cup grated sharp cheddar cheese (room temperature)
- 1/2 cup puffed rice cereal

I make this recipe most weeks – the kids love it and it is great for lunch boxes.

Serve warm with cream or custard, or eat cold as a cake. ( My mum doesn’t sprinkle with almonds, but waits until it has cooled and then ice with a simple lemon icing.

This tart is light and airy with a lovely citrus flavour.

Preheat oven to 150 C
Place lamb shanks in a plastic bag along with flour, paprika, cumin,coriander and salt, toss to coat.
Heat the olive oil in a large frying pan and pan fry shanks until golden all over. Transfer to a large casserole.
Add tomatoes, onion, stock and enough water to almost cover the meat.
Cover and cook for 3 hours, check after 2 hours adding extra liquid or turning meat if necessary.
