Ingredients
- 1 heaped cup peeled and sliced feijoas
- 1 cup boiling water
- 1 cup sugar
- 2 cups flour
- 1 teaspoon baking powder
- 50g butter
- 1 teaspoon baking soda
- 1 egg, beaten

1.5 kg onions
25g butter
1/4 cup olive oil
2 tablespoons balsamic vinegar
2 tablespoons brown sugar
Peel and finely chop onions, place in a large saucepan or frying pan along with the olive oil. and butter.
Cover and saute for 15 minutes over a medium heat. Stir and then reduce the heat to low, continue to cook covered for 30 minutes. Add the balsamic vinegar and brown sugar and cook for a further 10 minutes. The onions should be a rich brown colour.

I make batches of the spice mix up and keep in jar so it’s handy.
I have also used the mixture to sprinkle over the top of mashed potato when making a cottage pie

Cover fruit with water and boil for half an hour.
Strain.
For every 6 cups of juice add 3 cups of sugar and 1/2 cup of vinegar.
Boil 10 minutes.
Tastes just like ribena!
