Kids bolognese sauce

serves 4

Ingredients

 

  • 1/2 onion, finely chopped
  • 1 stick celery, finely sliced
  • 1 carrot, finely chopped
  • 1 clove garlic, finely chopped
  • 2 tablespoons olive oil
  • 400g beef mince
  • 4 rashers streaky bacon
  • 2 teaspoons flour
  • salt and freshly ground black pepper
  • 1 cup tomato juice
  • 400g tin tomatoes in juice
  • 1 tablespoon tomato paste
  • 1 sprig thyme
  • 1 bay leaf

 

 

 

Helen’s Favourite Chocolate Tart

This is one of my favourite desserts. Use good quality chocolate and Dutch cocoa – it really does make a difference.
serves 8-10

Ingredients

  • 350g sweet short crust pastry
  • 1 1/2 cups cream
  • 3/4 cup milk
  • 1/2 cup caster sugar
  • 200 g good quality dark chocolate, chopped
  • 4 egg yolks
  • 1 tablespoon Dutch cocoa

Ingredients

  • Sunflower oil for greasing
  • 50g butter
  • 50g dark chocolate
  • 200g ginger nut biscuits
  • 150g white chocolate
  • 250g curd cheese
  • 200g Greek yoghurt
  • 65g caster sugar
  • 284ml cream

Pork Chops baked with Apple and Sherry

As a couple of pensioners we cut the recipe down to suit and we just love it. The meat is always so tender.

Ingredients

  • 6 boneless pork chops
  • 3 large apples – peeled, cored and sliced
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter1
  • salt and pepper
  • 1/2 cup dry sherry

 

Method

1. Put in large frypan, brown chops, about 2 minutes each side, set aside.
2. Preheat oven to 180 C.
3. Arrange apple slices in the bottom of a baking dish.
4. Sprinkle with brown sugar and cinnamon.
5. Dot with butter
6. Top with browned pork chops and season with salt and pepper to taste.
7. Pour sherry over all, cover and bake in the preheated oven for 1 hour or until tender.
