Ingredients

  • Stuffing
  • 1 onion, finely chopped
  • 125g butter
  • 1/2 cup pine nuts
  • 1 cup pearl barley
  • 1 teaspoon cumin seeds
  • juice and zest of 1 lemon
  • 1 cup currants salt and freshly ground black pepper
  • 3 cups water
  • 8 quails
  • 1/2 cup extra virgin olive oil
  • 1/4 cup verjuice
  • salt and freshly ground black pepper
  • 16 grape vine leaves

Date And Chocolate Torte

 

Ingredients

  • 6 egg whites
  • 200g caster sugar
  • 200g dates, pitted and chopped
  • 200g dark chocolate, chopped
  • 200ml cream, whipped
  • extra grated chocolate for garnish

 

Method

Preheat the oven to 180 C. Beat egg whites until stiff peaks form then gradually add
sugar while continuing to beat until mixture becomes glossy. Fold in dates
and chocolate chips and pour into a lined 24cm cake tin. Bake for 1 hour
and then turn oven off and leave in oven overnight or until oven is cold.
Serve cake covered with whipped cream and grated chocolate.

 

 

Dried Figs In Red Wine Syrup

 

Ingredients

  • 1/2 bottle light red wine
  • 3/4 cup castor sugar
  • 1/2 cinnamon stick, broken into shards
  • peel of one orange, cut into broad strips
  • 500g dried figs

 

Method

Place wine, sugar, cinnamon and zest into a saucepan and heat gently stirring to dissolve sugar. Add the figs and poach until plump and tender. Strain the syrup reserving the figs, orange zest and cinnamon. Simmer the remaining syrup gently until reduced, pour over the reserved figs and allow to cool. Refrigerate until required. Serve at room temperature with full fat blue cheese and walnut biscotti.

 

 

Cheese and Cumin Puffs

 

Ingredients

  • 450g puff pastry
  • 125g cheese, finely grated (I use gruyere)
  • 2 teaspoons ground cumin
  • freshly ground black pepper

 

Method

Mix together the grated cheese, cumin and pepper. Roll the pastry to .5 cm thick
and cut out circles of 4 cm diameter. Place a little filling in the centre
of half the rounds, wet the edges with a little water and place another
pastry layer on top, pressing the edges together and crimp with a fork.
Bake for around 7 minutes or until golden and puffed.

 

Polenta Sweet Corn Fritters

 

Ingredients

  • 75g self raising flour
  • 1 cup polenta
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 1 egg
  • 1 cup milk
  • juice of 1 lemon
  • 1 cup corn kernels
  • olive oil

 

Method

Combine flour, polenta, salt and baking powder. Whisk together egg, milk, lemon
juice and add to the dry ingredients along with the corn. Mix until the
batter is smooth. Heat a little oil in a heavy based frypan and add spoonfuls
of batter, cook until golden brown, turn and cook other side. Serve warm
with crispy bacon and grilled tomato.

 

Cornish Pasty

Ingredients

  • 3 medium potatoes, peeled and diced
  • 1 small red onion, finely chopped
  • 100g swede, peeled and diced
  • 100g carrots, peeled and diced
  • 2 cloves garlic, crushed
  • 450g round steak, cut into small chunks
  • salt and freshly ground black pepper
  • 1 tablespoon softened butter
  • 900g short pastry
  • beaten egg to glaze
